Abstract

The issue of extreme price fluctuations during the peak harvest season remains a primary challenge for shallot farmers in Rejoso Village, Nganjuk Regency. The dependence of farmers on selling raw commodities places them in a weak bargaining position against intermediaries. This community service activity aims to increase the added value of shallots through mentoring in post-harvest processing technology and digital marketing implementation. The methods used in this activity included Participatory Action Research (PAR) involving socialization, technical training in post-harvest processing (crispy fried shallots and shallot oil using oil spinner technology), branding and packaging standardization, legal assistance (NIB and P-IRT), and digital marketing mentorship via social media and e-commerce platforms. The main outcomes of this program demonstrate an increase of participants' technical skills by 78%, an extension of product shelf life from 3 weeks to 6 months without synthetic preservatives, and an added value creation of up to 400% per kilogram of raw material. Furthermore, this program successfully expanded market reach and increased the farmers' net profit margin from 10%–15% to 35%–42%. In conclusion, the integration of post-harvest processing technology and digital marketing serves as a sustainable economic empowerment model to stabilize farmers' income against seasonal price drops
